A lot of times we have setbacks. Don't give in to them! As you realize that you failed, just get up and try again. That is how we learn.
I had a setback yesterday. It has been months since I haven't eaten potato, although I love them in any form or any time of day. So early yesterday morning I put an oxtail and all the trimmings and POTATOES in my slow cooker and boy did I pig out. It was delicious.
Off cource when I took my sugar reading it was 15. I was so disappointed in myself!! There and then I decided not to bring oxtail of potatoes into my kitchen again. Lucky for me I can do that since I am the one that cooks.
So today I made a wonderful Spicy Keto Tuna Melt cups. And I am going to share the recipe with you. Let me know what you think.
Spicy Keto Tuna Melt Cups
150 grams Tuna (drained)
1/4 cup (c) sour cream
1/4 c mayonaise
1/4 c chopped onions
3/4 c shredded cheddar
3/4 c crumbled feta
1 Tablespoon chopped parsley
salt and pepper
Jalapenos for garnishing
1. Preheat oven to 350 degrees. Grease a silicone muffin pan.
2. Combine tuna, egg, sour cream, mayonaise.onion, cheeses,parsley, salt and pepper.
3. Fill the pan and decorate the tuna with jalapenoes.
4. Bake 25 minutes and serve warm.
